The best part about a stir fry is that everyone can make their own. An easily customized meal with little effort that tastes great.
This is one of my favorite combinations. Makes 2 servings.
What You’ll Need
- 2 Chicken Breasts
- 1 Bell Pepper
- 1 Red Potato
- 2 Carrots
- 1 Broccoli Head
- 1/4 cup Sugar Snap Peas
- 1 small Zucchini
- 3 Cloves of Garlic
- Teriyaki Sauce
- Tin for cooking in
- Foil
What To Do
Preparing as many of the ingredients ahead of time can save time at camp.
Before You Go
- Cook and shred the chicken. Make sure not to over cook it.
- Dice the bell pepper and cut the broccoli into small pieces
- Shred the carrots
At the Camp
- Dice the potato into small pieces. Potato takes longer to cook Small pieces will ensure it cooks faster and evenly with the other veggies
- Cut the Sugar Snap Peas into thirds
- Slice zucchini into thin slices
- Mince garlic cloves
- Mix the veggies and chicken into cooking container
- Coat the chicken and veggies with the desired amount of teriyaki sauce
- Cover the thin with foil and place in fire’s coals. Check after 10 minutes to check for desired doneness.
This is also a great meal for cooking on a camp stove in a skillet or pot.
