Camping Cookbook: Blueberry Lemon Muffins


  • 1 package of Kodiak Blueberry Lemon Protein Packed Muffin Mix
  • 1 cup milk
  • 1/4 cup oil
  • 2 eggs


  1. Preheat oven to 375F
  2. Place paper baking cups in a 12 count muffin pan or grease pan
  3. Combine all ingredients in a mixing bowl. Hand stir until the batter is smooth
  4. Divide batter among 12 muffin cups, about 1/4 cup per muffin
  5. Bake 12 to 15 minutes or until golden brown or toothpick comes out slightly moist.
  6. Cool 5 minutes before removing from pan. Cool completely before storing.
